Known as the Gold Room, the split-level space, which originally served as a dining area, is marked by arched openings, a large stone balustrade, coffered ceilings, wood paneling, and crystal chandeliers. In the 1973 caper classic The Sting, the elegant room portrayed the upscale Chicago restaurant where Doyle Lonnegan (Robert Shaw) “convinced” Kid Twist (Harold Gould) to let him invest in his bookie scheme. Each ballroom on the Galleria level is themed either after the room's original function or the hotel's overall California-heritage premise. The Emerald Room was once the hotel's main guest dining room; its decor features images of hunt and harvest, with hand-painted animals and fish on the cast-plaster ceiling beams.

The Biltmore was forgotten, the doors closed, and what was once the pride of the city was destined for demolition. Recognising its historic value and beauty, architects Gene Summers and Phyllis Lambert stepped in to save her. They paid just $5.4 million to buy the building, and then proceeded to spend a further $30 million refreshing and modernising the hotel. The 70,000-square-foot Art Deco marvel features Spanish and Italian Renaissance styles and Moorish detailing throughout, complete with lavish, high-beamed and coffered ceilings.
